Hyatt Regency Coconut Point Resort & Spa Unveils Renovated Experience at Tarpon Bay Restaurant

Updated Restaurant Reopens Under the Direction of Chef de Cuisine Justin Spott and General Manager Johnathan Egged

Bonita Springs, Fla. (June 1, 2023) – Hyatt Regency Coconut Point Resort & Spa, an award-winning resort in Bonita Springs, has officially reopened its Tarpon Bay restaurant under the direction of Chef de Cuisine Justin Spott and General Manager Johnathan Egged. The restaurant, known for its fresh Florida inspired seafood, has completed an extensive renovation to provide an enhanced dining experience for resort guests and local residents.

“We are thrilled to reopen the doors to our Tarpon Bay Restaurant and provide guests with a newly modernized experience in our beautiful resort setting here at Hyatt Regency Coconut Point,” said Brian Kramer, General Manager at Hyatt Regency Coconut Point Resort & Spa. “This re-envisioning of our beloved Tarpon Bay will combine organic textures, pops of color and bright patterns to make it a unique blend of coastal meets modern design. Along with the physical updates, we have made some slight revisions our dining menus as well. New and loyal guests alike, are sure to be impressed and their pallets delighted.”

Upon arrival at the renovated Tarpon Bay, a bold entrance inspired by earthy tones greets guests, pinning together wood and metal finishes, along with a blue and amber glass chandelier. The entrance is complete with a striking wine bottle display to serve as its backdrop.  The restaurant’s displays and décor reflect sandy and coral tones in its carefully selected natural materials.  Accents of rope, wooden oars and coastal patterns will add a fresh and airlike feel to the area.

The renovated Tarpon Bay features an open-kitchen style with a bar and chef’s table, providing an exclusive and immersive dining opportunities.  With these design enhancements, the restaurant now enjoys an expanded total seating capacity of 219 guests.

Additionally, the modernized private dining area brings in bold, colorful patterns against a clean white architectural backdrop. Dining tables and seats in this area feature an array of oceanic blues, playful floral patterns and rich wooden textures. Guests can also enjoy Tarpon Bay’s enclosed patio, which balances dark chairs paired with light accent colors, complimented with playful yet natural lighting fixtures.

The updated restaurant is unveiled with some new captains at the helm, including Chef de Cuisine Justin Spott and General Manager Jonathan Egged. With 18 years of experience working in the hospitality industry, Justin Spott has always loved working in restaurants and calls the kitchen his “home away from home.” Originally from Richmond, Virginia, Spott began his career by working as a busser for Texas Roadhouse followed by his first role in the kitchen as a banquet cook for Meriwether-Godsey at the Lewis Ginter Botanical Gardens.

In 2012, Spott moved to Florida and began his Hyatt career working as a line cook at Hyatt Regency Coconut Point.  His hands-on education and experience in the culinary field allowed him to advance within the culinary team at Hyatt Regency Coconut Point over the course of 10 successful years working with the resort. Throughout his impressive career, Spott has been a member of the American Culinary Federation and has received multiple recognitions at Hyatt Regency Coconut Point including “Employee of the Month” and the “Rising Star Award.”

Originally from Hawaii, Jonathan Egged began working in restaurants as a host in a Waikiki beachside restaurant.  He began his Hyatt career in 2012 working at Hyatt Regency San Francisco, located in the city’s world-renowned Embarcadero district. During his time in the Bay Area, he completed Hyatt’s Corporate Management Training Program, which taught him the principles of upholding Hyatt’s five-star, five-diamond standards in every department of the hotel.

Throughout his time working with Hyatt, he has held management and leadership positions at hotels and resorts around the country including Park Hyatt Aviara Golf Resort & Spa in Carlsbad, CA, Park Hyatt New York, and Hyatt Regency Scottsdale Resort & Spa.

The Tarpon Bay renovation complements the resort’s multi-million-dollar guestroom renovation which was revealed earlier this year. The guestroom renovation included a complete transformation of the property’s 462 rooms and suites, adding a sophisticated coastal vibrancy to each of them.
